Today, We’re featuring the beautiful and talented Maris, of In Good Taste. This twenty-something, self-taught cook specializes in making tasty food that’s actually good for you. As someone in her twenties, always struggling to find simple but healthy recipes, I’m so excited to have found Maris’s blog!  I’ve already decided that I’m making her whole wheat penne pasta with spicy cauliflower. 1. Tell us a bit about your blog?

I’ve been blogging about food and life since May 2008. My recipes, cooking tips and anecdotes are focused toward young, busy professionals, like myself, who struggle to find the time to cook healthy, delicious meals.

This week we’re returning with a healthy living food blogger. We’re getting to know Brandi from Bran Appetit. Brandi is quite the cook and has tons of amazing-looking recipes with great pictures! I have my eye on this sweet potato falafel – YUM! Best of all, she didn’t start off as a rock start cook, she decided to learn after getting married. See? There’s hope for all of us!

1. Tell us a bit about your blog?

A few weeks ago, I posted about a new, delicious vegetarian recipe that I tried–Curried Cauliflower with Pasta and Chickpeas. I loved this recipe a lot and plan on making it again soon. The cookbook that this very delicious recipe came from was Nava Atlas’s Vegetarian Family Cookbook, which I highly recommend. I also just received her Vegetarian 5-Ingredient Gourmet cookbook for Christmas. I haven’t used it yet, but I can’t wait to try it out! I’ll be sure to post some of my favorite recipes.

I am excited to say that Nava Atlas agreed to guest post on Running With Mascara! It’s so exciting when you actually get to communicate with the author of a book you enjoy–it’s like meeting a celebrity! Be sure to check out Nava’s healthy eating website, VegKitchen!

The great thing about summer is that summer lends itself to healthy foods already.  Who wants to cook a big meal in the oven when it’s 85 degrees outside? Certainly not me! I enjoy eating light, summery foods that require minimal amounts of heated preparation.
